I was supposed to measure out 1 oz., but being crazy, I didn't measure and just kept eating. I almost feel like I'm testing my limits with the nuts to see how much I can indulge without weight-related consequences. It's not good.

It was great that Sbux had a 1 oz. bag of the Sahale Snacks, but unfortunately I wasn't a fan of this flavor. It was supposed to be chile-cheddar, but the chile was so strong that I couldn't taste anything but heat on the nuts. I could taste the cheddar when I ate the seasoning mix by itself. I think the formula should be tweaked.

I was out of town from late Friday night to early Monday morning (like 1 AM), visiting my friends in Washington, DC. It was a great time. I didn't fall off the wagon until late Saturday night at around 10 PM - I was starving and was at a networking party. Then I went back to my friend's place and had a massive craving for Crispix. Honestly, it was delicious. But the cereal must have messed with my blood sugar, because I woke up in the middle of the night shaking and desperately needing food.

Anyway, here's the list. I didn't bother with listing all of the calories because I didn't know enough to come up with totals.

Saturday, July 24
  • 1 scoop Isopure dutch chocolate protein - my fave for travel (110 kcals, 25g protein, 0.5g net carbs, 0.5g fat) and 1/4 cup whole milk (38 kcals, 2g protein, 3g carbs, 2g fat) in an iced decaf sugar-free vanilla Americano from Sbux. Total - (148 kcals, 27g protein, 3.5g carbs, 2.5g fat).
  • 1 serving (1 oz.) Jack Link's teriyaki beef jerky (80 kcals, 15g protein, 3g carbs, 0.5g fat)
  • 2 Oh Yeah! peanut butter cup protein wafers (210 kcals, 14g protein, 6g net carbs, 13g protein).
  • Ostrim Barbecue flavor beef & ostrich stick (80 kcals, 14g protein, 2g carbs, 1.5g fat) and 1 100-calorie pack natural almonds (100 kcals, 4g protein, 2g carbs, 9g fat). Total - (180 kcals, 18g protein, 4g carbs, 10.5g fat).

  • At networking dinner: About 2 oz. grilled chicken breast with a smidge of wasabi mayo and ranch sauce, 2 mini peanut butter cookies, 1/2 mini oatmeal raisin cookie, and 1 mini heart-shaped brownie. I talk about how much of a sweet tooth I have, but I thought the brownies were appallingly sweet. My food plan got thrown off, so I eventually gave in and had the chicken. After that, it was too easy to also reflectively eat a couple of the dessert options. At least they were extremely small. I think their diameter was about 1.5 inches, if that long.
  • A lot of Crispix! (ugh, my defenses were down after I caved in to the cookies and brownie)
  • In the middle of the night, I got the shakes (probably due to the Crispix) and needed to eat a bunch of stuff. I ate all manner of almonds, beef jerky, and Eggface mini-quiches.

Sunday, July 25

  • 4 baby carrots (about 20 kcals, 0.4g protein, 3.2g net carbs, 0g fat) and about 1/4 cup Trader Joe's hummus (160 kcals, 4g protein, 10g net carbs, 9g fat). I had no idea hummus is so laden with calories! Live and learn.
  • Way too much Honey Bunches of Oats :-(
  • 1 Oh Yeah! in 2 iced decaf sugar-free vanilla quad espressos from Sbux (220 kcals, 32g protein, 3g net carbs, 9g fat)
  • Some amount of chocolate-covered espresso beans that my friend brought back from Costa Rica. They were so good!
  • Late brunch at Social: Egg whites, 1.5 chicken sausage links, and (gasp!) most of a slice of dry whole grain toast. This was good, except I ate too much. If I'd omitted a couple of those bites, I would have been a lot more comfortable.
  • About 3 oz. (yep!) roasted and unsalted cashews at Dulles Airport
  • 1 Flatout Light Italian (90 kcals, 9g protein, 9g net carbs, 2.5g fat) with 2 slices Kraft fat-free Swiss (50 kcals, 8g protein, 4g carbs, 0g fat) and about 1 tsp. dijon mustard (5 kcals). Total - (145 kcals, 17g protein, 13g net carbs, 2.5g fat). I gave in to a late-night craving.

What I Cooked! July 17, 2010

This month's WLS-friendly feast had a theme that I called "Avante-garde American." America is the proverbial melting pot of many different flavors and cultures, and this meal was kind of like that.
Course 1: Jicama Pot Stickers with Miso-Black Bean Dipping Sauce

These "pot stickers" are thin slices of jicama that are salted and lightly steamed, stuffed with a mixture of homemade goat ricotta cheese, chopped shrimp, local shoepeg white corn, scallions, and chive. They were inspired by the idea of "jicama ravioli" that are stuffed with avocado by Jose Andres at Cafe Atlantico and filled with tuna tartare by Hubert Keller as described in his cookbook, The Cuisine of Hubert Keller. I took more of an Asian turn by imagining them as pot stickers instead of ravioli, and by infusing the black bean sauce with a good amount of miso paste. Jicama is a Mexican vegetable though, and the filling isn't remotely Asian-inspired, so this dish epitomizes the avant-garde melting pot theme.


Course 2: Crab Cakes, Portabella-Hearts of Palm Gratin, and Carrot-Roasted Grape-Bacon Slaw with Garlic Butter and Blackberry-Lemon Gastrique



From left to right: (1) Portabella-hearts of palm gratin. My mom wanted to see how I’d make a lower-carb version of baked macaroni and cheese. I got the idea of using hearts of palm as a macaroni replacement from Maria Health, one of my favorite food/healthy lifestyle blogs. (2) Carrot, roasted grape, and bacon slaw. I learned about roasting grapes here. The salad is very simple, with just red wine vinegar, Splenda, salt and pepper. (3) Crab cakes. I spotted this awesome recipe by Ellie Krieger for healthy but crispy crab cakes in this month’s Food Network Magazine. It’s excellent and will become a regular part of my repertoire. The yellow stuff on top is garlic butter. (4) Blackberry-lemon gastrique made with red wine vinegar.


Course 3: Chevon Paprikash with Corn Chowder, Zucchini-Parmesan Pancakes, and Green Tomato-Habanero Chow Chow


Dessert: "Cherubs"
I baked a sugar-free angel food cake last week and morphed it into three desserts.

From left to right:
(1) Rosemary-scented local peaches and sweetened freshly made ricotta over angel food cake;
(2) Banana-pecan bread pudding topped with homemade banana chips (this was supposed to be topped with sugar-free marshmallow and banana-pecan streusel, but I forgot the marshallow and ruined the streusel); and
(3) Snickers trifle, which is dark chocolate pudding layered with angel food cake, homemade sticky caramel, and peanuts that I roasted and seasoned myself. It’s topped with Cool Whip, more peanuts, more caramel, and a sweet cherry (sadly, my mom had never had a real cherry. She’d only had those nasty bright red ones from the jar. Yuck.).

All Whites (15 kcals, 3g protein, 0.5g carbs, 0g fat), 1 scoop Nectar vanilla bean torte protein powder (90 kcals, 23g protein, 0g carbs, 0g fat), baking powder, 2 tbsp. water, cinnamon, Splenda, 1 tbsp. FF ICBINB (5 kcals). Total - (150 kcals, 33.5g protein, 3g net carbs, 0g fat). I didn't have any sugar-free pancake syrup with me, so I improvised by mixing the fat-free I Can't Believe It's Not Butter ("ICBINB") with a little Torani sugar-free vanilla syrup. It was great!
  • 1 package Brothers All-Natural fuji apple crisps (aka dried fuji apples) (39 kcals, 7g net carbs). I was on the road and trying to stave off sleep, so I ate these for an energy boost.
  • 1/2 vanilla creme Oh Yeah! (110 kcals, 16g protein, 1.5g carbs, 4.5g fat) in 3 decafs.

It was very stupid, because not only was it counterproductive and compulsive, but it was much ado about nothing because I was back at 170.0 on Tuesday.

Had two exercise sessions today. In the morning, I walked on the treadmill for 43 minutes; nothing too strenuous. The elliptical was taken, so I had to use the treadmill and I tried to make it enjoyable by having a personal dance party, complete with singing along.

This evening, I went to hot yoga. The "party pose" of the evening was "Wild Thing" (aka camatkarasana.) It's a gorgeous backbend and is actually on the cover of this month's Yoga Journal. I sorta did it, lol.

The cheese released a little of its creaminess onto the squash through the marinade, which made this amazing slightly creamy dressing. I think I've found my favorite way to enjoy squash. The salad was beautiful too.

Today was a banner day in my gastric bypass "journey." At long last, I found something my pouch doesn't tolerate.

On the message boards, you see a lot of people carrying on about foods they can no longer "tolerate." I didn't know what that meant. Now I do. My beloved, delicious City Roots salad mix hurt my pouch a lot AND put me into some kind of coma. Because I'm crazy, I ate the rest of the salad anyway even though I had to take a break to let some of the pain subside. I still have about one serving of the sprouts left; I'm thinking maybe if I cook them they will be less painful to eat?

  • Cinnamon-"sugar" protein pancakes! 1/4 cup Friendship lowfat cottage cheese (45 kcals, 8g protein, 1.5g carbs, 0.8g fat), 2 tbsp. Egg Beaters (15 kcals, 3g protein, 0.5g carbs, 0g fat), 1 scoop Nectar vanilla bean torte protein powder (90 kcals, 23g protein, 0g carbs, 0g fat), baking powder, 2 tbsp. water, cinnamon, Stevia in the Raw, 1 tbsp. FF ICBINB (5 kcals) and 2 tbsp. SF Mrs. Butterworth's syrup (10 kcals, 2g net carbs). Total - (165 kcals, 34g protein, 4g net carbs, 0.8g fat). I made this because I only had about 1/4 cup of cottage cheese left; I hadn't realized last night how low I was on cottage cheese, so I couldn't make my traditional early morning meal of a protein frosty. But WOW, what a happy accident. I got a little too full from this because it's very dense, but it tasted like French toast! No, the texture isn't like real French toast, pancakes, or waffles (it's not light; very firm and sort of rough), but it's an absolutely perfect substitute for an RNY post-op.

I was so annoyed - I would have put a 1/2 cup in max, but homegirl didn't let me pour it herself, and tossed a bunch in before I could stop her. I have been stressed, and I love park walking because it's very peaceful. I listen to and sing along with my music. So it's "exercise" I suppose, but it's not cardio.

Last time I did this, the weight fell right off. It was a huge relief. This time, it's basically going nowhere. I'm still over 180 pounds, and nearly 10 pounds heavier than I was ten days ago. I was off plan for just over one day - 27 hours, to be exact. Guess I'm not allowed to slip.

I wonder if the questionable success of this detox has anything to do with my calorie levels. They've been quite low. But work has been so yucky coffees that it's been hard to keep up with my planned protein coffees.

I still haven't gotten them to stick together yet, but with the mild crunchiness of the jicama and the brightness and deliciousness of the tomato sauce, I was mega-pleased with this meal.

  • Kohlrabi with lemon-herb-cheese sauce - oh boyyy, this was so amazingly delicious: 135 grams kohlrabi chunks, boiled until soft and then lightly sauteed (36 kcals, 2.3g protein, 3.5g net carbs, 0.1g fat), 1 oz. Whole Foods fat-free mozzarella (40 kcals, 8g protein, 1g carbs, 0g fat), 1 tbsp. FF ICBINB (5 kcals), and adding random 10 kcals, and 2 carbs to account for seasonings. Total - (91 kcals, 10.3g protein, 5.5g net carbs, 0.1g fat). I boiled the kohlrabi until it was really soft this time, not just fork tender like yesterday. I added preserved lemon to the cheese sauce and made it a little more tangy with vinegar (mustard would have been good too.) Comfort food heaven, similar to cheesy potatoes, and very WLS-friendly! -

Some of my kohlrabi didn't get as done as I would have liked, but they were still good and the ones that were cooked soft were very yummy and potato-esque. I love this veg!

Actually, what didn't I eat?

Monday was a bad, bad day in the history of me and RNY. I started off great with an Egg Beater omelet with fat-free cheese and jicama home fries. I later had a protein shake. From there, I ate Oreos, random sandwich cookies, stale Goldfish crackers, chocolate Cheerios, peanut butter, cocoa almonds with sugar-free marshmallows, a few bites of sweet potato, my mom's barbecue country pork ribs, a Flatout with cheese and barbecue sauce, smoked gouda, 3 peaches, a lot of watermelon, an apple, a Fiber One chocolate peanut butter granola bar . . . hmm, I think that's it, but who knows? Some of these items were eaten in massive amounts, especially the cereal and peanut butter.

I did at least start the day with a 57-minute walk at the AnMed track. Maybe I'll exercise my way right back up to 300 pounds.

Hershey's Special Dark cocoa (5 kcals, 0.5g net carbs), Torani SF chocolate syrup, Splenda. Total - (140 kcals, 27.5g protein, 3.5g net carbs, 1g fat).
  • WLS-friendly cheesy scrambled eggs and hashbrowns: 1/2 cup Egg Beaters (60 kcals, 12g protein, 2g carbs, 0g fat), 129 grams grated kohlrabi with virtually calorie-free seasonings (36 kcals, 2.3g protein, 3.5g net carbs, 0.1g fat), 0.5 oz. smoked gouda, grated (50 kcals, 3.5g protein, 0g carbs, 4g fat). Total - (146 kcals, 17.8g protein, 5.5g net carbs, 4.1g fat). I got the idea for the low-carb hashbrowns from Maria Health blog. She makes hers from turnips, but I prefer the more muted flavor of kohlrabi. Also, you know I didn't use real oil (not that there's anything wrong with that) ;-) I like this recipe and am going to keep playing with them, but unfortunately, I majorly oversalted this batch. So, thumbs up on Maria's idea; I just need to tweak my execution.
  • Ryan's + Monica mega salad: 3 oz. roasted chicken breast (141 kcals, 26.3g protein, 0g carbs, 3g fat), maybe 3 tbsp. chopped egg whites with a little bit of yolk (about 20 kcals, 3g protein, 0g carbs, 1g fat), maybe 2 tbsp. of their crazy-delicious raw broccoli/bacon/cheese/mayo salad (roughly 33 kcals, 1g protein, 3g carbs, 2g fat), about 3.5 green olives, sliced (15 kcals, 1g protein, 0.3g net carbs, 1g fat), and 1 serving of my June 30th batch of roasted veggies (50 kcals, 2.8g protein, 7.5g net carbs, 0.3g fat), less than a cup of baby spinach (about 5 kcals). Roughly estimated total - (264 kcals, 34.1g protein, 10.8g net carbs, 7.3g fat).
  • Cappuccino protein frappucino: 1/2 cup Friendship lowfat cottage cheese (90 kcals, 16g protein, 3g carbs, 1g fat), 1/2 scoop Nectar cappuccino protein powder (45 kcals, 11.5g protein, 0g carbs, 0g fat), 1 tsp. instant decaf coffee crystals, DaVinci SF original hazelnut syrup, pinch of cinnamon, vanilla extract, Splenda.   • Chocolate protein frosty with mom: 1/2 cup Friendship lowfat cottage cheese (90 kcals, 16g protein, 3g carbs, 1g fat), 1/2 scoop Nectar chocolate truffle protein (50 kcals, 11.5g protein, 1g carbs, 0g fat), 1 tbsp. SF/FF chocolate pudding mix (20 kcals, 4g net carbs). Total - (160 kcals, 27.5g protein, 8g net carbs, 1g fat).
  • Post-midnight binge: About 1/4 cup chopped pecans (190 kcals, 3g protein, 1g net carbs, 20g fat) and about 6 tbsp. Peter Pan reduced-fat peanut butter (540 kcals, 24g protein, 36g net carbs, 33g fat). Total - (730 kcals, 27g protein, 37g net carbs, 53g fat). ARGHHHHHH!!!!! I had done pretty well all day, then this! Honestly, I think in the back of my mind, I believed the fattiness of this might do me well on the scale the next morning, since the last couple of times I overdid it on fat calories, I hit new lows on the scale. Alas, that didn't work this time - was up four pounds Monday morning. FAIL!

Holocaust Survivor?

My mom made a very un-PC and offensive comment to me last night. She said that with the boniness of my upper body, the thinness of my face, and my excess skin, I look like a Holocaust survivor.

She also said she was freaked out by skin and that my "girls" look like an old woman's. She looked at me with visible disgust. I was surprised by her reaction to my body because she's been working in surgery for almost forty years; she's seen all kinds of medical issues and isn't outwardly repulsed by her patients, I'm sure.

Oh well. I know she's happy for my success so far, and she was very supportive as I sought and went through the RNY. But recently, she's started making little sharp comments about my weight. I think it's hard for her to see me smaller than her. She has her own body issues (she's always thought she was fat even though she's never been more than a little pudgy and has, at some points, been downright skinny.)

I think I have to stop sharing my weight loss process with her. It is sad. We've always had an open relationship about such things, but she obviously can't handle these conversations without bringing out the daggers.

What I Ate: July 3, 2010

  • Strawberries and white chocolate protein frosty: 1/2 cup fat-free cottage cheese (80 kcals, 15g protein, 5g carbs, 0g fat), 1/2 scoop Matrix strawberry cream protein powder (55 kcals, 11.5g protein, 1g carbs, 0.8g fat), SF white chocolate syrup, lotsa ice. Total - (135 kcals, 26.5g protein, 6g carbs, 0.8g fat).
  • 1/2 vanilla creme Oh Yeah! protein shake in 4 shots of decaf espresso from Sbux (110 kcals, 16g protein, 1.5g carbs, 4.5g fat)
  • About 1/2 a coffee with 2 tbsp. half and half and xylitol from Whole Foods. Whole Foods is too "good" for Splenda and perhaps too stingy to carry Truvia, so I used some xylitol from a big bag. Wasn't a fan of it with my coffee, so I didn't drink all of it (guesstimating 50 kcals, 1g protein, 2g net carbs, 2g fat)
  • About 22 grams raw cashews from Whole Foods (122 kcals, 4g protein, 5.5g net carbs, 9.4g fat)
  • 1 mini-bag (1.5 oz.) Jack Link's original beef jerky (120 kcals, 22g protein, 5g carbs, 1.5g fat) and, shortly after, 2 BBQ Baked Lays that my nephew kind of forced on me (about 17 kcals, 0.3g protein, 2.7g net carbs, 0.4g fat). Total - (137 kcals, 22.3g protein, 7.7g net carbs, 1.9g fat).
  • 2 clusters crab legs from Harbor Inn seafood restaurant (about 155 kcals, 36g protein, 0g carbs, 2g fat), 94 grams kohlrabi, boiled and sauteed to taste like potatoes (25 kcals, 1.6g protein, 2.5g net carbs, 0g fat), and 1 oz. smoked gouda (100 kcals, 7g protein, 0g carbs, 8g fat). Total - (280 kcals, 44.6g protein, 2.5g net carbs, 10g fat).
  • Messed-up mocha shake (the blender at my mom's house was being uncooperative): 1/2 cup Friendship lowfat cottage cheese (90 kcals, 16g protein, 3g carbs, 1g fat), 1/2 scoop Nectar cappuccino protein powder (45 kcals, 11.5g protein, 0g carbs, 0g fat), about 2 tsp. It was still great!: 1/2 cup fat-free cottage cheese (80 kcals, 15g protein, 5g carbs, 0g fat), 1/2 scoop Matrix strawberry cream protein powder (55 kcals, 11.5g protein, 1g carbs, 0.8g fat), SF white chocolate syrup, lotsa ice. Total - (135 kcals, 26.5g protein, 6g carbs, 0.8g fat).
  • Roasted vegggie sandwich: 1 serving of my June 30th batch of roasted veggies (50 kcals, 2.8g protein, 7.5g net carbs, 0.3g fat) and 1 slice Kraft fat-free Swiss (25 kcals, 4g protein, 2g carbs, 0g fat) on 1/2 Light Italian Flatout (45 kcals, 3.3g protein, 4.5g net carbs, 1.8g fat). Total - (120 kcals, 10.1g protein, 14g net carbs, 2.1g fat). I love this, but it's kinda carby.
  • 1 vanilla creme Oh Yeah! in 5 decaf coffees (220 kcals, 32g protein, 3g carbs, 9g fat)
  • Roughly 1 oz. raw cashews (163 kcals, 5g protein, 7g net carbs, 12g fat)
    Pizza night! 1 Light Italian Flatout (90 kcals, 7g protein, 9g net carbs, 3.5g fat), 1.5 oz. Whole Foods fat-free mozzarella (60 kcals, 12g protein, 2g carbs, 0g fat), 8 turkey pepperoni, chopped (35 kcals, 4.5g protein, 0g carbs, 1.8g fat), 16 grams Vidalia onion (7 kcals, 1.2g net carbs), and 58 grams vine-ripened tomato with oregano, basil, and garlic (16 kcals, 1g protein, 2g net carbs, 0g fat). Total - (208 kcals, 24.5g protein, 14.2g net carbs, 5.3g fat).
  • Another neapolitan protein frosty: 1/2 cup fat-free cottage cheese (80 kcals, 15g protein, 5g carbs, 0g fat), 1/2 scoop Matrix strawberry cream protein powder (55 kcals, 11.5g protein, 1g carbs, 0.8g fat), 1 tbsp. Hershey's cocoa (10 kcals, 1g net carbs), SF white chocolate and French vanilla syrups, lotsa ice. Total - (145 kcals, 26.5g protein, 7g carbs, 0.8g fat). My OH friend Nikki has reinterpreted the neapolitan shake and posted it on her blog, Bariatric Foodie. I think hers probably tastes more "real" than mine; she uses real strawberries and all. Very fancy!

What I Ate: July 1, 2010 (Happy July!)

Me and the scale continue to have some kind of standoff. I don't understand the thing at all. I actually may not be getting enough sleep, which I've heard can affect water retention (and thus, leads to water weight gain - haven't found any studies that verify this, however). I overslept this morning, so I missed my planned hour on the elliptical that I was really looking forward to. I was annoyed, but my body really needed the rest.

Unintentionally, I had a vegetarian day! I miss being a veggie. I was on the side of light and love for about 4 or 4.5 years, then I transitioned to being pescatarian for health reasons and because living in SC as a vegetarian was unmanageable unless I wanted to eat hush puppies for every meal. I was pescatarian for about 1.5 years. Then, when I decided to have RNY and thought I'd need the meat for protein, I went on a fried chicken bender - Chick-Fil-A, KFC, Popeye's, I had it all! But I'm toying with the idea of going back, at least to pescatarianism. I love protein supplements, so really there's no reason to eat meat. The only concern is that, as I get farther out, I might need denser foods like meat that take a long time to digest to keep the surgery working for me.

Anyway, food:

  • Chocolate-caramel protein shake: 1/2 cup cottage cheese (80 kcals, 15g protein, 5g carbs, 0g fat), 1/2 scoop Nectar chocolate truffle protein powder (50 kcals, 11.5g protein, 1g carbs, 0g fat), 1 tbsp. Hershey's unsweetened cocoa (10 kcals, 1g carbs), SF dulce de leche syrup. Total - (140 kcals, 26.5g protein, 7g carbs, 0g fat).
  • About 2 tbsp. half and half in a Starbucks decaf brewed coffee (40 kcals, 1g protein, 1.6g carbs, 4.6g fat)
  • OMG delicious roasted vegetable sandwich: 1 serving of my June 30th batch of roasted veggies (50 kcals, 2.8g protein, 7.5g net carbs, 0.3g fat) and 1 oz. Whole Foods fat-free cheddar (40 kcals, 8g protein, 1g carbs, 0g fat) on 1/2 Light Italian Flatout (45 kcals, 3.3g protein, 4.5g net carbs, 1.8g fat). Total - (135 kcals, 14.1g protein, 13g net carbs, 2.1g fat). This was one of the most delicious dishes I've eaten since surgery, seriously - and completely (lacto) vegetarian. This is the kind of simple food that lets me know that I could happily go back to vegetarianism or at least pescatarianism. The only thing I'd miss is my turkey bacon!
  • 1 vanilla creme Oh Yeah! in 2 decaf coffees plus 1 Starbucks grande decaf iced Americano with SF vanilla syrup (220 kcals, 32g protein, 3g carbs, 9g fat)
  • 10 large raw cashews from The Fresh Market (about 120 kcals, 3g protein, 5g net carbs, 10g fat)
  • Crazy delish vegetarian egg white omelet: 1/2 cup All Whites (60 kcals, 12g protein, 2g carbs, 0g fat), 55 grams summer squash (9 kcals, 1g protein, 1.3g net carbs, 0.1g fat), 3 finely chopped green olives (15 kcals, 1.5g fat), 1 oz. Whole Foods fat-free cheese (40 kcals, 8g protein, 1g carbs, 0g fat), 1 slice Kraft fat-free Swiss (25 kcals, 4g protein, 2g carbs, 0g fat), 3 basil leaves, a little garlic powder, paprika, dried oregano, dried rosemary, and preserved lemon (5 kcals, 1g net carbs). Total - (154 kcals, 25g protein, 7.3g net carbs, 1.6g fat).
  • Chocolate peanut butter cookie protein frosty: 1/2 cup cottage cheese (80 kcals, 15g protein, 5g carbs, 0g fat), 1/2 scoop Inspire peanut butter cookie protein powder (66 kcals, 12.5g protein, 0.5g carbs, 0.5g fat), 1 tbsp. Hershey's unsweetened cocoa (10 kcals, 1g carbs), 1 tbsp. SF/FF chocolate Jello pudding mix (15 kcals, 3g net carbs), SF peanut butter and dulce de leche syrups. Total - (171 kcals, 27.5g protein, 9.5g net carbs, 0.5g fat).

I was feeling crappy about myself for oversleeping and not working out, then I randomly attempted urdhva dhanurasana (wheel pose) tonight before Bethenny's Getting Married. I didn't expect to make it at all - but I did it! I did it FOUR times, perfect form, straight arms and everything! That made the whole day better :-)

Roasted Vegetables Rock.

Last night, I roasted a bunch of vegetables, put together a little vinaigrette, and pre-packaged them into 10 servings.

Unfortunately, I didn't take a photo. I didn't realize they'd be so scrumptious I'd want to post about them. But here's what I included:

628 grams zucchini (3 small-medium sized), diced
172 grams okra, sliced into discs
392 grams summer squash (3 small), diced
208 grams red bell peppers (1 large), chunked
195 grams Vidalia onion, chunked
190 grams portabellas (1 container), cut into about 1-inch pieces
242 grams green beans, snapped into bite-sized pieces

You'll notice that I didn't use anything exotic - I really wanted to keep it simple.

These veggies cook at different rates, so I roasted them all separately except for the red bell peppers and onions. With the green beans, I pre-steamed them in the microwave for three minutes with a little water, then I roasted them. I didn't time anything, just cooked at 450 degrees until done and nicely caramelized.

For the vinaigrette, I chopped up a bunch of my preserved lemon and combined it with fresh basil, dried rosemary, dried oregano, dried thyme, garlic powder, paprika, soy sauce, minced ginger, Liquid Smoke, stevia in the raw, and natural rice vinegar (yep, a lot of ingredients!) I coated the veggies in the vinaigrette before portioning and freezing.

Each portion contains about 50 calories, 3 grams of protein, 8 grams NET carbs, and less than half a gram of fat. I wouldn't advise eating these by themselves for a meal, especially not early post-op, unless you're like me and have no problem getting 120+ grams of protein a day.

Today I made a roasted vegetable sandwich with 1/2 a Light Italian Flatout wrap and one ounce of fat-free cheese. It was heavenly and made me think back fondly to my vegetarian pre-op days!
