Review: Virginia's on King, Charleston

I had the good fortune of visiting Charleston on Friday, August 6 on business. Because Charleston is an amazing food city, I wanted to check out a new restaurant while I was in town. My options were limited, however, as I was only there for the day and could only squeeze in a restaurant lunch. (Some of the most celebrated Charleston restaurants, like FIG, Charleston Grill, Peninsula Grill, and Tristan, aren't open for lunch.)

I'd originally planned to go to Slightly North of Broad (aka "S.N.O.B.") for lunch because I've heard it's the best in Charleston for lunch. But en route to SNOB, I passed Virginia's on King. The lunch menu looked terrific, and the prices were amazing given the ambiance and the inventiveness of the menu. They have a cute Southern affectation of referring to lunch as "dinner" and dinner as "supper." There were a lot of people there, so I assumed it's a place the locals enjoy. SNOB's menu, in contrast, wasn't as exciting to me. Plus, I'd been to SNOB before. For these reasons, Virginia's became the site for my post-exam smorgasbord.

As you'll understand from the recap below, I suspended my adherence to WLS dietary guidelines for the day. It was planned, so I don't feel guilty about it.

Before I get into specific reviews of each dish, note that Virginia's will be having a new head chef very soon. The manager told me that right now, they are operating with two sous chefs and no executive chef or chef de cuisine. So, take all the negatives with a grain of salt, as the menu and the execution of that menu may change.

Also, please excuse the fuzziness of the food porn. My only camera is a Blackberry, and Virginia's was rocking the mood lighting which further compromised the photo quality.

Okra Soup
Nostalgia. This soup reminded me of my grandfather, who made killer vegetable soup using lots of pork as a flavoring agent. I think they may have used bacon instead of salt pork, which would explain the hint of smokiness in the soup.

The soup was perfectly salted, but too greasy and -- interesting for an "okra soup" -- didn't contain much okra. I got exactly two slices of okra in the entire cup of soup. If this had been called "tomato soup with okra" or even "traditional southern vegetable soup," I would have been more on board with it. (What have we learned this season from Top Chef's Amanda with the minestrone, Stephen with the chimichurri, and Ed with something I can't recall right now? Don't mislabel your food!)

Also, where was the corn? It's a little odd for a southern vegetable soup to have okra and tomatoes but no corn (but that is not a fatal flaw.)

Broccoli Cornbread
This dish is a stroke of pure genius. Who would ever think, "Y'know, what this cornbread needs is a few broccoli spears"? I want to know who came up with this idea. It was awesome. The moistness of the broccoli really worked well with the cornbread, which was sweet enough but not overly so. It was great alone and dipped in the soup. I didn't eat all of the broccoli cornbread, but I wanted to.

Pimento Cheese

This pimento cheese was nothing special. It was "aight." It was a touch too mayonnaise-heavy and runny for my liking. I like a stronger focus on the cheddar cheese. They make a big deal on the menu about how it's made in-house, but it didn't taste much better than Ruth's. (To be fair, my reference point for excellent pimento cheese is DiPrato's Delicatessen in Columbia, which sets an almost unattainable bar. DiPrato's pimento cheese is truly the gold standard, the undisputable champion.)

Furthermore, excellent pimento cheese -- especially if it's made in-house -- should be served with a flavorful and special accompaniment (for example, the buttery, garlicky pita triangles at DiPrato's.) Instead, Virginia's pimento cheese comes with cardboard-flavored, obviously store-bought sesame crackers. The spread was better on the grilled bread from my shrimp and scallop salad.

Yet, even with these criticisms, I can't be too upset about this dish. I ate a good deal of it, even spreading it on the bread, shrimp, scallops, and chicken livers to add flavor. So, it couldn't have been that bad.

Tomato Pie
Of the dishes I tried, this one was most obviously plagued with execution errors. Conceptually, you can't go wrong with a deep-dish pie stuffed with fresh tomatoes, onions, mayo, and cheese. Yet, if the tomatoes are uncooked, the onions tough, the pastry too dense, and the whole pie undersalted, there's a problem.

Uncooked tomatoes -- self-explanatory, but mystifying considering that it doesn't take a lot of time for tomatoes to cook down. It makes me wonder what their technique is with the pie; do they bake both the top and bottom crusts separately and put the filling in last or something? Is that even possible?

The pastry at the back of the slice of pie was so dense it was inedible. The top pastry was quite good, but the bottom was a little too soggy which is a challenge particularly with tomato pies. You can avoid this by pre-salting the tomatoes and allowing a lot of the liquid to drain off, but apparently they did not do this. Well, apparently, they didn't salt anything at all. This had no salt. It was like a low-sodium tomato pie -- completely bland.

The most offensive aspect of the dish, however, was the chopping of the onions. Specifically, they didn't peel the onion deeply enough, so I had the tough green part of the onions in my pie. ALL of the onions were tough and crunchy. I hadn't had tomato pie before, but I'm positive that was not the way it was supposed to be. It didn't have that sumptuous, comfort-food appeal you imagine when you hear "tomato pie."

Chicken Livers

This was the worst dish I tried on Friday. The livers themselves were nicely fried with flavorful, well-executed coating. I don't have many complaints about the livers.

The fatal flaws were (1) the caramelized onions, which were in fact burnt -- you could actually see the black flecks scraped off the bottom of the pan, and they imparted an intense bitterness that ruined the entire dish; and (2) the greasy, gloppy sauce, which was ostensibly bacon and tomato gravy, but lacked tomato or bacon color or flavor. I asked the server, but I'm still clueless about what I was ingesting.

Fortunately (?), I only ate 1 of the livers. So, no significant caloric waste.

Shrimp & Scallop Salad

This is the dish I ordered to make sure the meal met my nutritional needs. Scallops and shrimp poached in broth over salad greens is super-high protein, low-carb, and low-fat. I got the potential diet busters, chive creme fraiche and lemon vinaigrette, on the side. If I were stopping here for lunch and hadn't planned a splurge, this is unquestionably what I'd order.

More specifics: The scallops and shrimp are poached in a mixture of broth (not sure what kind), white wine, and capers. It's served with grilled bread, mesclun greens, and tomatoes. Usually, the shrimp and scallops come dressed with the chive creme fraiche, reminiscent of a traditional seafood salad.

This was great! The shrimp and scallops had a delicate-but-present flavor that was heartening after the bad flavor of the chicken liver accompaniments and the non-flavor of the tomato pie. The creme fraiche was also delicately flavored, but it wouldn't have added much to the shrimp and scallops and may have even detracted from them if it were all mixed together.

Interestingly, the star of this plate was the lemon vinaigrette. It was so delicious that I was dipping all kinds of stuff into it -- the bread, the bland crackers from the pimento cheese, even the cornbread.

Pecan Pie a la Mode


I only had 2 bites of this, but it definitely gets my strong seal of approval. Generally, I'm not a pecan pie fan. I find most versions too chewy and/or cloyingly sweet. I only ordered it this time because the server said it was one of their most popular desserts.

This pecan pie was neither too sweet nor too firm. It was just gooey enough, and had a strong butteriness. I wanted to eat all of it, but thank God I didn't or I might have died right there in the restaurant.

S'more Cheesecake

The final dish. What a way to end a meal.

S'more cheesecake is chocolate cheesecake with a graham cracker crust, topped with a toasted marshmallow and drizzled with chocolate sauce. It was their dessert special, but I would strongly recommend adding this to the regular dessert menu stat. (Not that my opinion is especially informed, but this was amazing.)

Because chocolate, cheesecake, graham cracker crust, and toasted marshmallows are individually some of my favorite foods, I knew I was going to order this. I was slightly concerned, however, that all of these components added together would be way too sweet. I'm so glad I was wrong. They used the chocolate cheesecake as a sort of tart element, which balanced well with the sweet marshmallow. My absolute favorite component was the graham cracker crust. They could have just served me a bowl of that crust and I would have been very happy.

What really brought this dessert home, though, was the ice cream from the pecan pie a la mode. :-) Of course I didn't eat even half of the cheesecake, but most of what I ate was the graham cracker crust with the ice cream. Simple and heavenly.

OVERALL IMPRESSION

As explained above, the savory dishes were inconsistent. The desserts, however, were excellent, especially for an affordable restaurant.

The service was good. I sat at the bar as I typically do when eating alone. My server was busy, but attentive. He forgot to give me silverware at first, so I was forced to sit and take in the nostalgia-inducing aroma of the okra soup for about 5 minutes before I could eat it. But I wasn't starving, and the soup was still hot when I could eat it, so it was fine. Also, after I ate the soup, the server told me to keep the dirty spoon instead of giving me a fresh spoon. That was not ideal. But this is not a four-star restaurant; it's nice but affordable and convenient, and is thus apparently not the kind of place that gives fresh silverware after every course.

The server and manager seemed to become more interested in me when it was obvious that I was going to write about the restaurant. (I ordered lots of food that I didn't eat and was taking photos.) The manager was an interesting guy. He was refreshingly honest about the direction of the restaurant and the limitations of their current menu. He made me want to come back to experience the food again after their personnel changes.

I loved meeting the manager in part because he's originally from Dublin, Ireland. He even went to the same university as me. He's lived in the US for about 20 years, so I didn't notice the Irish accent at first. But as we were chatting, I heard the distinctive sound of Dublin emanate from his lips. Connecting with a fellow Irishman was almost as enjoyable as the S'more Cheesecake.

  • Basic chocolate protein frosty: 1/2 scoop Nectar chocolate truffle protein powder (50 kcals, 11.5g protein, 1g carbs, 0g fat), 1/2 cup fat-free cottage cheese (80 kcals, 15g protein, 5g carbs, 0g fat), 1 tbsp. Hershey's unsweetened cocoa (10 kcals, 1g net carbs), DaVinci SF vanilla and chocolate syrups. Total - (140 kcals, 26.5g protein, 7g carbs, 0g fat).
  • 4 Eggface bites with turkey ham, fat-free cheese, and onions (84 kcals, 14.4g protein, 2.1g net carbs, 4.8g fat) and 1 serving of my June 30th batch of roasted veggies (50 kcals, 2.8g protein, 7.5g net carbs, 0.3g fat). Total - (134 kcals, 17.2g protein, 9.6g net carbs, 5.1g fat).
  • 1 serving roasted lite firm tofu (45 kcals, 7g protein, 2g carbs, 1.5g fat).
  • 1 Pure Protein vanilla cream shake in 3 decaf coffees (160 kcals, 35g protein, 2g net carbs, 1g fat) with 3 sugar-free LaNouba marshmallows (40 kcals, 8g net carbs) and Torani SF chocolate syrup. Total - (200 kcals, 35g protein, 10g net carbs, 1g fat)
  • 1 square Sweetriot unBar 70 (70% dark chocolate with cocoa nibs and raisins) (45 kcals, 0.7g protein, 3.8g net carbs, 3.5g fat). I thought I was getting something else, but oh well. I don't like my chocolate quite this dark but it was OK.
  • 1/2 vanilla creme Oh Yeah! (110 kcals, 16g protein, 1.5g carbs, 4.5g fat) in an Sbux quad espresso with SF vanilla syrup.
  • Cappuccino protein frosty: 1/2 scoop Nectar cappuccino protein powder (45 kcals, 11.5g protein, 0g carbs, 0g fat), 1/2 cup fat-free cottage cheese (80 kcals, 15g protein, 5g carbs, 0g fat), 1 tbsp. Hershey's unsweetened cocoa (10 kcals, 1g net carbs), SF vanilla, chocolate and praline syrups. Total - (135 kcals, 26.5g protein, 6g carbs, 0g fat).
  • Chocolate protein pancakes with chocolatey pancake syrup: 1/4 cup fat-free cottage cheese (40 kcals, 7.5g protein, 2.5g carbs, 0g fat), 2 tbsp. Egg Beaters (15 kcals, 3g protein, 0.5g carbs, 0g fat), 1 scoop Nectar vanilla bean torte protein powder (90 kcals, 23g protein, 0g carbs, 0g fat), 1 tbsp. unsweetened cocoa powder (10 kcals, 1g net carbs), baking powder, 2 tbsp. SF chocolate and vanilla syrups, cinnamon, Splenda, 2 tbsp. FF ICBINB (10 kcals) and 2 tbsp. SF Mrs. Butterworth's syrup (10 kcals, 2g net carbs). Total - (165 kcals, 33.5g protein, 5g net carbs, 0g fat). These were so good! The trick to good protein pancakes is to avoid overcooking them. There is a delicate balance between making sure they are done enough on one side so they don't crinkle up when you try to flip them, but that they aren't even close to being overdone. My Saturday batch was way overcooked and tough, but tonight's were phenomenal. Yay.

I'm working on expanding my at-home practice of yoga, for a few reasons. First, serious yoginis don't just practice at the studio (unless they have unlimited funds, I suppose.) Yoga is meant to be practiced daily. Second, I'm about to take a $13,000 cut in my annual salary while moving from a state with one of the nation's lowest costs of living to a place with one of the highest costs of living. I gotta be a little more frugal. That might mean, for example, finding a studio where I can get free classes by volunteering and/or practicing at a studio only once a week or so.

All of that to say, I got some at-home vinyasa in today! Just 20 minutes in the morning before leaving Anderson because I was afraid I'd be late to work; but I did 37 minutes in the evening before bed.

What I Ate: July 31 - August 1, 2010

I was visiting the fam this weekend. Considering how horrible my diet usually becomes when I'm up there, I didn't do so badly this time. However, I engaged in a lot of compulsive eating at night, which I excused by eating mostly things I knew wouldn't screw up my weight (lots of nuts and cheese). I ate some of my step-niece's birthday cake, but that's the one thing I'm not concerned about. It was okay. I'm mostly concerned about my out-of-control compulsive eating. Nuts are a fierce trigger!

Saturday, July 31:
  • Cinnamon protein pancakes with too much SF maple syrup
  • 1 Pure Protein Cookies-N-Cream protein shake (120 kcals, 23g protein, 2g net carbs, 1g fat) in an Sbux iced sugar-free vanilla decaf quad espresso
  • 1 oz. roasted and salted soy nuts
  • MASSIVE amount of dill pickle cashews, on the road. I craved these so compulsively that I pulled over on the side of the road in the rain to fish them out of my back seat. You know you have a problem when . . .
  • Nibbles at my step-niece's first birthday shindig: Several bites of Publix marble cake with icing, a small bite of a hot dog on a bun with chili and mustard, and 3 nacho cheese Doritos
  • 1 serving roasted lite firm tofu (45 kcals, 7g protein, 2g carbs, 1.5g fat).
  • More dill pickle cashews (I was starving!) followed shortly thereafter by 2 Ellie Krieger Crisp Crab Cakes (112 kcals, 13.8g protein, 11g net carbs, 0.4g fat) and a tiny bit of roma tomato with Tony Chachere's
  • About 1/4 of a cameo apple, maybe 2 T peanut butter, a few raisins, and 1 white grape
  • 1 slice whole wheat bread, 1 slice lean deli turkey, and various cheeses, including Cabot Black Wax cheddar, Robusto, and Kraft 2% cheddar
  • More cheeses listed above and lots of Target garlic almonds
Note that the last 3 items were all consumed after midnight, which technically means I ate them on Sunday, but they felt more part of Saturday.

Sunday, August 1:
  • Even more cheese and Target garlic almonds (some of the eating spilled over through 5 AM, and that bout felt more part of Sunday), and 1 oz. roasted/salted soy nuts
  • Strawberry cheesecake protein frosty
  • Chocolate cheesecake protein frosty
  • Another chocolate cheesecake protein frosty
  • Cookies & cream protein frosty
  • More garlic almonds and 2% sharp cheddar

At least I worked out a tiny smidge. On Sunday, I went for a brisk 3-mile walk at the hospital track, sandwiched between church and visiting my grandmother. Sundays with the family are never relaxed because we spend practically all day in church.

What I Ate: July 24-25, 2010

I was out of town from late Friday night to early Monday morning (like 1 AM), visiting my friends in Washington, DC. It was a great time. I didn't fall off the wagon until late Saturday night at around 10 PM - I was starving and was at a networking party. Then I went back to my friend's place and had a massive craving for Crispix. Honestly, it was delicious. But the cereal must have messed with my blood sugar, because I woke up in the middle of the night shaking and desperately needing food.

Anyway, here's the list. I didn't bother with listing all of the calories because I didn't know enough to come up with totals.

Saturday, July 24
  • 1 scoop Isopure dutch chocolate protein - my fave for travel (110 kcals, 25g protein, 0.5g net carbs, 0.5g fat) and 1/4 cup whole milk (38 kcals, 2g protein, 3g carbs, 2g fat) in an iced decaf sugar-free vanilla Americano from Sbux. Total - (148 kcals, 27g protein, 3.5g carbs, 2.5g fat).
  • 1 serving (1 oz.) Jack Link's teriyaki beef jerky (80 kcals, 15g protein, 3g carbs, 0.5g fat)
  • 2 Oh Yeah! peanut butter cup protein wafers (210 kcals, 14g protein, 6g net carbs, 13g protein).
  • Ostrim Barbecue flavor beef & ostrich stick (80 kcals, 14g protein, 2g carbs, 1.5g fat) and 1 100-calorie pack natural almonds (100 kcals, 4g protein, 2g carbs, 9g fat). Total - (180 kcals, 18g protein, 4g carbs, 10.5g fat).
  • 1 Power Crunch peanut butter creme protein bar (200 kcals, 13g protein, 9g net carbs, 12g fat) and 4 Eggface mini-quiche bites with ham, onion, bell pepper, and mushrooms (84 kcals, 14g protein, 2.8g net carbs, 6.8g fat). Total - (284 kcals, 27g protein, 11.8g carbs, 18.8g fat)
  • At networking dinner: About 2 oz. grilled chicken breast with a smidge of wasabi mayo and ranch sauce, 2 mini peanut butter cookies, 1/2 mini oatmeal raisin cookie, and 1 mini heart-shaped brownie. I talk about how much of a sweet tooth I have, but I thought the brownies were appallingly sweet. My food plan got thrown off, so I eventually gave in and had the chicken. After that, it was too easy to also reflectively eat a couple of the dessert options. At least they were extremely small. I think their diameter was about 1.5 inches, if that long.
  • A lot of Crispix! (ugh, my defenses were down after I caved in to the cookies and brownie)
  • In the middle of the night, I got the shakes (probably due to the Crispix) and needed to eat a bunch of stuff. I ate all manner of almonds, beef jerky, and Eggface mini-quiches.

Sunday, July 25

  • 4 baby carrots (about 20 kcals, 0.4g protein, 3.2g net carbs, 0g fat) and about 1/4 cup Trader Joe's hummus (160 kcals, 4g protein, 10g net carbs, 9g fat). I had no idea hummus is so laden with calories! Live and learn.
  • Way too much Honey Bunches of Oats :-(
  • 1 Oh Yeah! in 2 iced decaf sugar-free vanilla quad espressos from Sbux (220 kcals, 32g protein, 3g net carbs, 9g fat)
  • Some amount of chocolate-covered espresso beans that my friend brought back from Costa Rica. They were so good!
  • Late brunch at Social: Egg whites, 1.5 chicken sausage links, and (gasp!) most of a slice of dry whole grain toast. This was good, except I ate too much. If I'd omitted a couple of those bites, I would have been a lot more comfortable.
  • About 3 oz. (yep!) roasted and unsalted cashews at Dulles Airport
  • 1 Flatout Light Italian (90 kcals, 9g protein, 9g net carbs, 2.5g fat) with 2 slices Kraft fat-free Swiss (50 kcals, 8g protein, 4g carbs, 0g fat) and about 1 tsp. dijon mustard (5 kcals). Total - (145 kcals, 17g protein, 13g net carbs, 2.5g fat). I gave in to a late-night craving.

What I Ate: July 23, 2010

  • Chocolate protein shake with random added flavors: 1/2 scoop Nectar chocolate truffle protein powder (50 kcals, 11.5g protein, 1g carbs, 0g fat), 1/2 cup fat-free cottage cheese (80 kcals, 15g protein, 5g carbs, 0g fat), 1 tbsp. Hershey's unsweetened cocoa (10 kcals, 1g net carbs), SF syrups. Total - (140 kcals, 26.5g protein, 7g carbs, 0g fat).
  • 4 Eggface mini-quiche bites with ham, onion, bell pepper, and mushrooms (84 kcals, 14g protein, 2.8g net carbs, 6.8g fat)
  • Mocha protein frosty with random added flavors: 1/2 scoop Nectar cappuccino protein powder (45 kcals, 11.5g protein, 0g carbs, 0g fat), 1/2 cup fat-free cottage cheese (80 kcals, 15g protein, 5g carbs, 0g fat), 1 tbsp. Hershey's unsweetened cocoa (10 kcals, 1g net carbs), Torani SF vanilla and DaVinci SF praline, toasted marshmallow, and peanut butter syrups. Total - (135 kcals, 26.5g protein, 6g carbs, 0g fat).
  • 1/2 vanilla creme Oh Yeah! (110 kcals, 16g protein, 1.5g carbs, 4.5g fat) in an Sbux quad espresso with SF chocolate and vanilla syrups. Yummy drink en route airport.
  • Salad: 200 grams jicama (76 kcals, 2g protein, 8g net carbs, 0g fat), 1 oz. Jennie-O extra lean turkey ham (30 kcals, 4g protein, 1g net carbs, 1.5g fat), 1 oz. Whole Foods fat-free sharp cheddar (40 kcals, 8g protein, 1g carbs, 0g fat), about 1.5 tbsp. leftover homemade green tomato-habanero chow chow (about 10 kcals, 2g net carbs). Total - (156 kcals, 14g protein, 12g net carbs, 1.5g fat). What amazes me about salad is that it's hard to mess it up. This was beyond random, yet tasty.
  • 2 100-calorie packs natural almonds (200 kcals, 8g protein, 4g net carbs, 18g fat) and 4 more Eggface mini-quiche bites with ham, onion, bell pepper, and mushrooms (84 kcals, 14g protein, 2.8g net carbs, 6.8g fat). This was all from my travel food stash.

What I Ate: July 19, 2010

  • Cinnamon protein pancakes: 1/4 cup Publix fat-free cottage cheese (40 kcals, 7.5g protein, 2.5g carbs, 0g fat), 2 tbsp. All Whites (15 kcals, 3g protein, 0.5g carbs, 0g fat), 1 scoop Nectar vanilla bean torte protein powder (90 kcals, 23g protein, 0g carbs, 0g fat), baking powder, 2 tbsp. water, cinnamon, Splenda, 1 tbsp. FF ICBINB (5 kcals). Total - (150 kcals, 33.5g protein, 3g net carbs, 0g fat). I didn't have any sugar-free pancake syrup with me, so I improvised by mixing the fat-free I Can't Believe It's Not Butter ("ICBINB") with a little Torani sugar-free vanilla syrup. It was great!
  • 1 package Brothers All-Natural fuji apple crisps (aka dried fuji apples) (39 kcals, 7g net carbs). I was on the road and trying to stave off sleep, so I ate these for an energy boost.
  • 1/2 vanilla creme Oh Yeah! (110 kcals, 16g protein, 1.5g carbs, 4.5g fat) in 3 decafs.
  • Salad of parsley and zucchini (20 kcals, 1.4g protein, 2.3g net carbs, 0.3g fat) topped with 2 oz. Whole Foods fat-free mozzarella (80 kcals, 16g protein, 2g carbs, 0g fat). Total - (100 kcals, 17.4g protein, 4.3g net carbs, 0.3g fat).
  • 2 oz. roasted and salted cashews (320 kcals, 10g protein, 14g net carbs, 28g fat)
  • Maybe about 2 oz. green/raw peanuts (322 kcals, 14.6g protein, 4.4g net carbs, 28g fat) and 0.5 oz. fat-free mozzarella (20 kcals, 4g protein, 0.5g carbs, 0g fat). I ate this because I had an emotional reaction to the scale. At night after I got home, it said 172.4, and I was disappointed because that meant I probably wouldn't hit goal on Tuesday morning. It was very stupid, because not only was it counterproductive and compulsive, but it was much ado about nothing because I was back at 170.0 on Tuesday.

I'm doing a modified liquid diet for the next few days (shakes all day, a light dinner.) I'll do it as long as I feel like doing it.

  • 1/2 vanilla creme Oh Yeah! protein shake in 4 shots of decaf espresso from Sbux (110 kcals, 16g protein, 1.5g carbs, 4.5g fat)
  • 1 vanilla creme Oh Yeah! in 3 decaf coffees (220 kcals, 32g protein, 3g carbs, 9g fat)
  • Strawberries and white chocolate protein frosty: 1/2 cup fat-free cottage cheese (80 kcals, 15g protein, 5g carbs, 0g fat), 1/2 scoop Matrix strawberry cream protein powder (55 kcals, 11.5g protein, 1g carbs, 0.8g fat), SF white chocolate syrup, lotsa ice.   • I continue my adventures with potato replacements: 176 grams kohlrabi chunks, boiled until soft and then browned (47 kcals, 3g protein, 4.5g net carbs, 0.2g fat) and 6 grams sorrel, with a cheese sauce made with 2 tbsp. FF ICBINB (10 kcals, 1g carbs), 1 oz. Whole Foods fat-free monterey jack and cheddar cheese (40 kcals, 8g protein, 1g carbs, 0g fat), dried oregano, sprinkles of garlic and onion powder, paprika, thyme, pepper, salt, Stevia in the Raw, vinegar, DaVinci sweetening syrup (5 kcals, 1g net carbs). Total - (102 kcals, 11g protein, 7.5g net carbs, 0.2g fat). Gosh, this was yummy comfort food. Some of my kohlrabi didn't get as done as I would have liked, but they were still good and the ones that were cooked soft were very yummy and potato-esque. I love this veg!
  • Cookies & cream protein frosty: 1/2 cup cottage cheese (80 kcals, 15g protein, 5g carbs, 0g fat) and 1 tbsp. SF/FF cheesecake Jello pudding mix (15 kcals, 3g carbs), 1/2 scoop Matrix Cookies & Cream protein powder (65 kcals, 11.5g protein, 2g carbs, 1g fat), ice, water, SF cookie dough syrup, Hershey's SF chocolate syrup (8 kcals, 2g carbs). The instructor had us hold moves a really long time instead of doing flow, and my thighs were just not having it. She also had us do core work, which I have never experienced in a yoga class before.

Actually, what didn't I eat?

Monday was a bad, bad day in the history of me and RNY. I started off great with an Egg Beater omelet with fat-free cheese and jicama home fries. I later had a protein shake. From there, I ate Oreos, random sandwich cookies, stale Goldfish crackers, chocolate Cheerios, peanut butter, cocoa almonds with sugar-free marshmallows, a few bites of sweet potato, my mom's barbecue country pork ribs, a Flatout with cheese and barbecue sauce, smoked gouda, 3 peaches, a lot of watermelon, an apple, a Fiber One chocolate peanut butter granola bar . . . hmm, I think that's it, but who knows? Some of these items were eaten in massive amounts, especially the cereal and peanut butter.

I did at least start the day with a 57-minute walk at the AnMed track. Maybe I'll exercise my way right back up to 300 pounds.

Hershey's Special Dark cocoa (5 kcals, 0.5g net carbs), Torani SF chocolate syrup, Splenda. Total - (140 kcals, 27.5g protein, 3.5g net carbs, 1g fat).
  • WLS-friendly cheesy scrambled eggs and hashbrowns: 1/2 cup Egg Beaters (60 kcals, 12g protein, 2g carbs, 0g fat), 129 grams grated kohlrabi with virtually calorie-free seasonings (36 kcals, 2.3g protein, 3.5g net carbs, 0.1g fat), 0.5 oz. smoked gouda, grated (50 kcals, 3.5g protein, 0g carbs, 4g fat). Total - (146 kcals, 17.8g protein, 5.5g net carbs, 4.1g fat). I got the idea for the low-carb hashbrowns from Maria Health blog. She makes hers from turnips, but I prefer the more muted flavor of kohlrabi. Also, you know I didn't use real oil (not that there's anything wrong with that) ;-) I like this recipe and am going to keep playing with them, but unfortunately, I majorly oversalted this batch. So, thumbs up on Maria's idea; I just need to tweak my execution.

I had done pretty well all day, then this! Honestly, I think in the back of my mind, I believed the fattiness of this might do me well on the scale the next morning, since the last couple of times I overdid it on fat calories, I hit new lows on the scale. Alas, that didn't work this time - was up four pounds Monday morning. FAIL!

What I Ate: June 28, 2010

Oddly, after consuming almost 2,000 calories yesterday, the scale hit a new low this morning: 172.4. That's a meager 3.4 pounds from my first goal of 169, which is half of my highest measured weight of 338.

For some reason, insanely overeating nuts and avocados seems to trigger my weight loss, not stall it. Last weekend, I probably ate about the same number of calories on Sunday or perhaps less, but I'm guessing that because what I ate was relatively low in fat and high in carbs (albeit, mostly fiber), it had a different effect on me than the nuts did.

Weekend of June 5-6: I go to Charleston, where I binge on avocados and Blue Diamond cinnamon-brown sugar almonds. Have a few bites of banana pudding; nothing outrageous. Monday's scale reading? 173.something (a new low.)

Weekend of June 19-20: I go to Anderson, where I binge on watermelon and Nik's chocolate peanut butter fudge protein pie with Fiber One crust. Monday's scale reading? 180, up 6 pounds from Friday morning (yes, I know it wasn't all fat.)

Weekend of June 26-27: I'm in Kentucky, where I binge primarily on natural almonds and raw cashews. Monday's scale reading? 172.4 (a new low.)

Interesting outcomes, but I'm not going to read too much into it. The fact is, I need to stop overeating period. But, if I do overeat, I will try to focus on healthy fats.

There was some kind of unappealing dessert of fudge with raspberries and bourbon sauce; I very slightly tasted it but ate less than half a bite. However, my big mistake was eating a ton of the vegetables! I wanted to have more room for them, so I ate the veggies first and saved the meat for the end - but that was dumb, because I still overate and couldn't get through the chicken.
  • 1 sample pack of chocolate Unjury protein powder (100 kcals, 20g protein, 4g carbs, 0g fat) in 1/2 cup skim milk (45 kcals, 4g protein, 6g carbs, 0g fat). Total - (145 kcals, 24g protein, 10g carbs, 0g fat).

For exercise, I did 40 minutes of treadmilling and 15 minutes of yoga on my nifty travel yoga mat. I played in the pool for about an hour in the afternoon, but I don't think that counts :-)

What I Ate: June 25, 2010

Yesterday was one of those days where I couldn't exactly calculate my calories. I'm at a conference, and I decided to participate in the meals and, unfortunately, the late night DORITOS (yes I'm apparently a "Dorito-eater" now) and BAKED LAYS as well :-( Hot mess, but I was granted a reprieve on the scale this morning. My cheapie scale read 173 or so this morning.

  • 1 chocolate About Time travel shake in iced decaf coffee (125 kcals, 30g protein, 0g carbs, 0g fat)
  • 25 grams organic raw cashews (139 kcals, 4.5g protein, 7.5g net carbs, 11g fat)
  • Lunch: A little arugula salad with some kind of real vinaigrette, the insides of a roasted vegetable sandwich (roasted yellow bell pepper, a little zucchini, summer squash, portabella mushroom, some kind of herbed cream cheese), 1 mini Babybel Light cheese (50 kcals, 6g protein, 0g carbs, 3g fat), 18 grams Blue Diamond natural almonds (102 kcals, 3.8g protein, 1.9g net carbs, 9g fat), 13 (one serving) Miss Meringue sugar-free chocolate meringue cookies (40 kcals, 5g protein, 3g net carbs, 0g fat). I have no real way of knowing the caloric content of this, but I'm guesstimating - (322 kcals, 16.8g protein, 9g net carbs, 22g fat).
  • About 1.75 oz. full-fat cheese (about 200 kcals, 14g protein, 0.6g carbs, 18.8g fat) and 5 candied pecans (30 kcals, 0.3g protein, 2g net carbs, 2.3g fat). Total - (230 kcals, 14.3g protein, 2.6g net carbs, 21.1g fat).
  • Another 18-gram baggie of natural almonds (102 kcals, 3.8g protein, 1.9g net carbs, 9g fat)
  • Roughly 4 oz. salmon with some kind of sweet sauce on it (178 kcals?) and several thin stalks of roasted asparagus

What I Ate: June 21, 2010 (Fifth-Eleventh Recovery Edition)

It was that kind of a weekend. I went to Anderson, I cooked dinner for my mom this weekend (see photos and description here), I was surrounded by trigger foods, and to top it off, my "visitor" decided to arrive a few days early. I didn't have time to exercise either. It was the perfect storm to knock me off track. I'm not beating myself up. Sure, I wish I hadn't eaten like a crazy person, and I'm up a whopping SIX POUNDS from Saturday morning. But I dunno; I'm not worried yet. This doesn't feel like the beginning of downhill slide.

But I try to view every slip-up as a teachable moment, and here's what I learned from this one:

Lesson 1: I'm still a compulsive eater, and one of the most important tools for me to manage it is to avoid foods that set me off. Some foods, even "healthy" ones, are just not okay to keep in my house. Ever. No matter what anyone else tells me.

I thought I'd gotten better with controlling my compulsive eating. Aside from the extreme gluttony of this past weekend and the almonds from last weekend, I'd been so much better with that. Turns out that was not because I'm somehow less of a compulsive eater than I was before; I simply wasn't surrounding myself with my danger foods like Calcet chewable vitamins, Fiber One, or powdered peanut butters. This weekend, the latter two were part of a WLS-friendly dessert, and of course I ate an ungodly amount of them. No more chocolate peanut butter fudge pie for me!

Lesson 2: I need to exercise pretty much every day, even if I have cramps and feel like crap.

Even with the trigger food-fest, I think I would have been a lot better, especially on Sunday, if I hadn't missed three days of exercise. I messed up this morning before my workout with several sugar-free Hershey's chocolate bars, remnants of the weekend. I got to the gym and chocolate was smeared all over my workout shorts, and I didn't feel like working out AT ALL. But I forced myself to do it, and five minutes in, my whole outlook had changed. I know I wouldn't have eaten that chocolate if I'd exercised before eating.

At least based on Obesity Help, a lot of successful long-term post-ops don't need to exercise daily. But I've learned that I'm not like them. I have to, not just to burn calories, but mostly to get into a healthy mindset.

Okay. With all of that said, onto my Monday log:

  • Caramel latte protein shake: 1/2 cup cottage cheese (80 kcals, 15g protein, 5g carbs, 0g fat), 1/2 scoop Inspire cinnamon cappuccino protein (55 kcals, 15g protein, 0.5g carbs, 0g fat), and SF dulce de leche and French vanilla syrups. Total - (135 kcals, 30g protein, 5.5g net carbs, 0g fat).
  • 8 sugar-free Hershey's mini chocolate bars (256 kcals, 1.6g protein, 19.2g net carbs, 20g fat). Terrible stats, eh? They are even worse when you consider that they are full of sugar alcohols. The total carb count is 35, but I always subtract 1/2 of the sugar alcohol grams to get net carbs. But, oh well. I ate it, I wrote it, and I won't buy these again for a very long time.
  • 1 Oh Yeah! vanilla creme in 4 decaf coffees and 1 Starbucks iced decaf Americano with SF hazelnut syrup (220 kcals, 32g protein, 3g carbs, 9g fat)
  • 5 raw cashews (about 43 kcals, 1.3g protein, 2.2g net carbs, 3.3g fat)
  • Chicken and mozzarella omelet with salad: 1/2 cup Egg Beaters (60 kcals, 12g protein, 2g carbs, 0g fat) with 3 oz. ground chicken breast (80 kcals, 17g protein, 3g carbs, 0.5g fat), 1 oz. Whole Foods fat-free mozzarella (40 kcals, 8g protein, 1g carbs, 0g fat), a handful of arugula (5 kcals), and ginger-mustard dressing (10 kcals, 1g net carbs). Total - (195 kcals, 37g protein, 7g carbs, 0.5g fat). This was mega delicious and the protein numbers were awesome, but it was a little large for my pouch. I probably should have had half the chicken and/or half the egg beaters. It was tasty though!
  • Chocolate Irish cream protein frosty: 1/2 cup cottage cheese (80 kcals, 15g protein, 5g carbs, 0g fat), 1/2 scoop Nectar chocolate truffle protein powder (50 kcals, 11.5g protein, 1g carbs, 0g fat), 1/2 tbsp. Hershey's unsweetened cocoa powder (5 kcals, 0.5g net carbs), 1 tbsp. SF/FF white chocolate pudding mix (15 kcals, 3g carbs), SF Irish cream syrup. Total - (150 kcals, 26.5g protein, 9.5g carbs, 0g fat).

What I Cooked! June 19, 2010

Since January, I've been preparing one meal a month for my mom. They are always multiple courses, but WLS-friendly. (Even though my mom is a non-op, I refuse to cook foods that I can't eat.)

This month, I sort of went with a summer solstice theme. Here's what I served:

Course 1: Watermelon Three Ways

Right: Frothy cucumber-watermelon gazpacho with lemon.

Center: Salad of baby arugula with caramelized watermelon, warm almond-crusted goat cheese medallions, and orange-infused balsamic reduction.

Left: Spicy watermelon salsa with thinly sliced summer squash. The salsa contains watermelon, jicama, tomato, avocado, red onion, jalapeno, basil, and a little salt, vinegar, sucralose, and red pepper flake.

Course 2: Biscuits & Jelly

Clockwise from the top: (1) Jalapeno-cheddar Carbquik biscuit; (2) Tomato gazpacho aspic with cucumbers, bell peppers, and red onion; (3) "Candied" turkey bacon (made using Nature Sweet brown); and (4) Hard-boiled egg. This was sort of a deconstructed thing. It's designed that you take a little of each thing and eat it together. Both my plating and photography were particularly bad - sorry!

Course 3: Poached Halibut with Summer Bounty in Lemon-Chamomile Broth


"Summer Bounty" is just another word for summer vegetables, and this version contained asparagus tips, golden beets, kohlrabi, and hen-of-the-woods mushrooms. The halibut is sprinkled with a few crushed pink peppercorns. Unfortunately, with all the craziness going on, I think my halibut was slightly overcooked. That was a practically criminal mistake considering how expensive it was!

Either way, I loved this dish. It really tasted like summer with the floral aroma of the chamomile, the brightness of the lemon, and the light feel of the entire dish.

Kohlrabi is a particularly welcome new discovery. Steamed simply with salt until fork tender, it tasted like potatoes - but check out these fabulous stats. This summer veggie could open up a whole new world of culinary possibilities.

I think this might be my best plating for any entree thus far. My entrees usually look like a mess, but I thought this one was quite beautiful.

Course 4: Red Velvet Pancakes and Reese's Cup Protein Pie

Top: Chocolate peanut butter fudge frozen protein pie. Check out the recipe from Bariatric Foodie. Unfortunately, I ate almost the entire pie by myself, so I don't think I'll be making it again unless it's for a party where lots of people will eat it. Very yummy! One small change I'd suggest is using much less crust than the recipe calls for. I'd cut the crust recipe by a full 2/3.

Bottom: Red velvet protein pancakes with (sugar-free, fat-free) cream cheese sauce and toasted chopped pecans. This was so, so, so, so good. Mom gobbled it right up. The cream cheese sauce made all the difference.

I followed the basic protein pancake recipe from Maria Health blog, but used chocolate protein and cocoa instead of vanilla, tripled the amount of baking powder, and of course, added red food coloring.

I had fun. It sent me on a bit of an eating spree, but it is always fun to brainstorm and prepare these meals.

What I Ate: June 12-13, 2010

It was a travel weekend, and I was with other people, so of course I didn't track as well as I should have. However, with the exception of banana pudding on Saturday - a planned deviation from the norm - I made good food choices.

Saturday was a trip to Edisto Beach and a subsequent trip to Charleston. We attended a barbecue in Edisto where they roasted a whole pig. In Charleston, we went out for dinner at a Mexican restaurant. I spent the night in Charleston.

Oddly, even after the banana pudding and lots and lots of almonds and avocados, the scale hit a new low on Monday morning - 173.9. Apparently, my body likes healthy fats. Yay.

Saturday, June 12:
  • Strawberries and white chocolate protein shake
  • 1 oz. original Jack Link's beef jerky and 1 100-calorie pack natural almonds
  • Substantial amount of roasted pork with a tiny bit of South Carolina mustard-based BBQ sauce and real banana pudding (yum! I ate a tiny bit too much of it, but in general it was worth the calories/carbs)
  • Cinnamon-brown sugar almonds
  • From downtown Charleston's Taco Boy: A mega delicious HUGE salad with grilled flank steak (a little past the temperature I requested, but it was still tasty and wasn't dry so I didn't complain), roasted corn, avocado (an entire 1/2 avocado, and yes I ate all of it), and roasted red peppers. It also came with queso fresco and tortilla strips but I ordered it without the tortillas and had the cheese on the side. I also ordered the roasted poblano vinaigrette, which was delicious, on the side. The salad was huge. I wound up eating all of the "good stuff" and left most of the romaine. I also had some guacamole (not as good as mine) and two chips.
  • Unfortunately, more cinnamon-brown sugar almonds. A LOT more.
Saturday's exercise was a 3-mile brisk walk first thing in the morning, before getting on the road to Charleston.

Sunday, June 13:
  • At 4 AM - cinnamon-brown sugar almonds
  • 1/2 bananas & cream Oh Yeah! over ice with 1 tsp. cocoa, a squirt of light whipped topping, and 4 chunks of canteloupe
  • Moe's: Had a salad with grilled chicken, black beans, pico de gallo, guacamole, olives, onions, mushrooms, and salsa (both regular and corn-tomato). Like yesterday, I focused on eating "the good stuff," particularly the chicken and black beans, and I discarded pretty much all the lettuce. No, it doesn't have many calories, but I wanted to use my pouch space for the nutritious stuff and not the filler.
  • 1/2 vanilla creme Oh Yeah! in a Starbucks iced decaf Americano. Tres tasty.
  • The rest of the cinnamon-brown sugar almonds. I didn't even like these that much, but they nonetheless beckoned to me while I was driving back from Charleston. Not good, but it could be worse. I was kinda craving French fries, so having nuts was a great move. Another back up plan to avoid the fries is drying green beans in the oven, but I will save that strategy for another day.
  • Coffee cheesecake protein frosty.
  • More of my tamarind-yuzu glazed cherries. They are starting to go bad - I wish I'd frozen them :-(
  • Irish creme coffee cheesecake protein frosty.

Gosh, so glad May is over! What a crazy month that was.

After about 5 days of no-holds-barred decadence, I'm back on the wagon. Scale was back up to 182 this morning, so 8 pounds up from last week's low of 174. :-( It's okay. I expect it to come right back off. What's important is not how many times we fall, but that we get back up again.

I'm doing the liquid protein diet Wednesday-Friday, for a couple reasons. First, I haven't had time to get my food in order for the week, and with the GRE coming up on Saturday, I don't have time to cook now either. Also, after last week and this weekend, I think this will hit my mental reset button in addition to getting the high-carb stuff out of my system.

So, the eats:

  • 1 Pure Protein Cookies-n-Creme RTD shake (120 kcals, 23g protein, 2g net carbs, 1g fat) in 2 decaf coffees with 3 LaNouba sugar-free marshmallows (40 kcals, 8g net carbs)
  • Irish cream/butter rum protein frosty: 1/2 cup cottage cheese (80 kcals, 15g protein, 5g carbs, 0g fat), 1/2 scoop Nectar chocolate truffle protein powder (50 kcals, 11.5g protein, 1g carbs, 0g fat), 1 tbsp. SF/FF white chocolate Jello instant pudding mix (15 kcals, 3g carbs), 1 tbsp. fat-free ICBINB (5 kcals), ice, water, SF butter rum and Irish Cream syrups.
